75% Thailand Christmas Dark Chocolate - Bare Bones

£7.50

Merry Christmas from Bare Bones! 🎄🎅

Our Christmas special is a 75% single-origin chocolate from Thailand, with taste notes of stewed fruits, cashew and orange peel. This limited edition contains just two ingredients: cacao and raw unrefined cane sugar.

We have sourced this cacao from Chanthaburi province in eastern Thailand, where it grows amongst durian and mangosteen trees on a farm run by Khun Suriya Chaisutti and his wife Boom Khun. They are among the first of a new generation of farmers to cultivate cacao in Thailand 🇹🇭

In Thailand, cacao is still a young crop. In the 1980s and early 90s, the Ministry of Agriculture and Cooperatives brought in cocoa varieties from Malaysia, the Tropical Horticulture Research Station in Florida, and the University of Reading to see whether cocoa could grow alongside the country’s coconut trees. One variety stood out from all the trials and was named the Chumphon 1 hybrid, after the research centre where it was developed. It’s the same variety Khun Suriya and Khun Boom grow on their farm today.

Handcrafted in Glasgow, from bean to bar.

Origin: Thailand
Region: Chanthaburi
Source: Suriya Farm
Variety: Chumphon 1 hybrid
Fermentation: 6 days with a 7 day drying process
